Yummy! I made them in mini loaf pans. The office staff gobbled them up. I did notice the loaf I saved for the second day was rubbery. The second batch I doubled the recipe. I used half white sugar and half brown sugar. I used 3 egg whites and 2 whole eggs. This solved the rubbery problem but not quite as healthy. I added a little cinnamon to the glaze � perfect!!
